I’ve got a ’91 with 7-spoke, 14" factory wheels, currently shod in
185/60-14 rubber. My son insists it’s possible to get more rubber on
them, and suggests a 205/60-14. I’ve got Tokico gas shocks/springs,
so I sit around an inch lower than stock. Any insights?

If all you want is "more rubber" without any regard for performance,
yeah, a 205/50-14 should fit OK. A bit wide for your 5.5" wheels.
OTOH, if you want to improve the car’s handling, buy a set of summer
performance tires in 185/60 or 195/55. The best 14" Miata street tire is
probably the 195/55-14 Toyo T-1S. They don’t work in snow, though.
